Desi way of making bread (roti, chapati, qulcha or naan) in Lahore, Pakistan using earthen oven called tandoor or tanoor. Tanoor is fired using gas. Its a speed cooking method. Dozen or so breads can be cooked per minute. For a normal man two to three breads means stuffed tummy. Using a swift swinging motion, the bread is stuck to the inside wall of tanoor. The hot wall bakes it from behind and the fire & heat bakes it from the other side. There is no need to flip the bread. The naanbai (breadmaker) uses two iron bars to detach the bread from the inside wall and pull it out. It is centuries old method for mass cooking, before gas, it used to be fired using woods etc.
